I love making a wide variety of soups and stews for my family and every fall and winter, they look forward to my homemade Santa Fe Bean Soup. This soup is really easy to prepare and I usually make it in my crock pot and let is slow cook for a few hours.
Slow Cooker - Santa Fe Bean Soup Recipe
3 (14 ounce) cans beef broth
1 (16 ounce) can pinto beans, drained
1 (15 ounce) can kidney beans, drained
1 (10 ounce) can chopped tomatoes and green chiles, undrained
1 (6 ounce) can tomato paste
1 tsp. liquid smoke
1 cup shredded sharp cheddar cheese
Combine first 6 ingredients in a large cooking pan. Bring to a boil, reduce heat and simmer uncovered for 30 minutes. To Serve: ladle soup into bowls and sprinkle the cheddar cheese on top.
Optional: You can also do this in the slow cooker. Just dump in the first 6 ingredients into your crock pot, turn your crock pot on the low setting and simmer for 2-3 hours.
