This is a very easy to prepare recipe that is great with potato chips but is also great as a veggie dip if you like your dips with a little spicy kick to them.
Pimento Chip Dip Recipe
3 large eggs, beaten fluffy
3 tbsp. granulated sugar
3 tbsp. vinegar
1-2 lumps of butter, softened
1 (12 oz.) sm. jar of pimento, drained and chopped
8 oz. pkg. cream cheese, beaten
1/4 tsp. onion salt
1 tsp. ground cloves
Mix all ingredients together in a large mixing bowl, mix until smooth and creamy. Cover the bowl and place into the refrigerator for several hours to allow it to chill and for the flavors to infuse.

I love pimento, I'll have to try this, especially because it doesn't require heat!
