Today I am sharing with all of you another vintage recipe that was given to me by my great grandmother. This recipe is from the late 1940's and even though it is vintage...it is still a family favorite!
Scalloped Tomatoes and Cucumber Recipe
2 1/2 cups of canned tomatoes
1 teaspoon salt
1 1/2 teaspoon Worcestershire sauce
1 small onion, finely chopped
1 large cucumber
2 cups soft bread crumbs
3/4 cup shredded American cheese
In a large bowl combine together the tomatoes, salt and Worcestershire sauce; set aside. Chop up your onion and slice down your cucumber. Add the chopped onion to the bowl and stir until everything is well combined. In a medium-sized baking dish pour the tomato mixture onto the bottom of the dish in a layer. Then place the slices of cucumber on top and then the soft bread crumbs on top of the cucumber slices. Place dish in a preheated 350 degree oven and bake for 20 minutes. Remove and sprinkle the shredded cheese on top and place dish back into the oven to bake for an additional 10-15 minutes. Serve warm.
