Here at our home we love Mexican food and this recipe for Chicken Salsa Soup is really easy to make and tastes absolutely delicious! Once it is done cooking you can serve it with a dollop of sour cream on top along with some shredded Parmesan or Cheddar Cheese.
Mexican Chicken Salsa Soup Recipe
2 cups cooked & diced chicken (white meat)
14 oz. can chicken broth (we use Swanson)
1 1/2 cups of water
2 teaspoons ground chili powder
1/2 teaspoon salt
1/2 teaspoon ground black pepper
10 oz. bag frozen corn, thawed
2 cups cooked white rice, water drained
1 1/2 cups chunky salsa (your favorite brand)
In a large stock pot combine together all of the above ingredients and bring the mixture up to a boil. Reduce heat and cover the pan. Simmer over medium heat for 20 minutes or until done. Spoon into bowls and top with sour cream and freshly grated Parmesan cheese.
