This is a recipe I got from my sister about 9 years ago and to this day...it is one of my family's favorite recipes! During the winter months we make it on our indoor grill and during the summer months...on our outdoor gas grill. I think you will love this recipe as it will make 4 servings.
Grilled Chicken with Garlic & Mango Salsa
4 boneless, skinless chicken breasts
4 tbsp. Tomato Basil Garlic seasoning
4 tsp olive oil
2 c. steamed white rice
Mango Salsa
2 ripe mangoes, skinned, seeded and then diced into cubes
4 tomatoes, seeded and diced
1/4 c. chopped cilantro
1/4 c. lime juice
Preheat grill. Place the tomato basil garlic seasoning in a bowl. Brush chicken breasts with olive oil and dip into the seasoning, coat both sides evenly. In another bowl, combine all of the Mango salsa ingredients and toss. Grill chicken 7 minutes, turn and grill another 7 minutes or until chicken is done. Serve grilled chicken breast on a bed of cooked rice.
