I love making a wide variety of homemade jams and jellies for my family and this peach freezer jam is one of our favorites. Once you have the jam prepared, you will need to freeze it in 5 glass mason jars or in 5 freezer containers. (Recipe makes approximate five 8-ounce servings).
Homemade Peach Freezer Jam Recipe
2 1/4 cups peaches, finely chopped & skins removed
2 tablespoons lemon juice
3 1/2 cups granulated sugar
3/4 cup water
1 box Sure-Jell fruit pectin
In a large mixing bowl, combine together the chopped peaches with the lemon juice. Thoroughly mix in the granulated sugar and let stand for 10 minutes. In a small saucepan mix together the water with the fruit pectin and bring to a boil. Boil mixture for one full minute, stirring constantly. Stir the hot fruit pectin mixture into the peach mixture and continue stirring for 3 minutes. Ladle the peach jam into 5 glass mason jars or 5 freezer containers. Cover. Let them stand at room temperature for 6 to 8 hours to set. Place one container in the refrigerator and the rest into the freezer until ready to use.
