We are very fortunate that our backyard garden is doing extremely well this year. Many in this area have had problems due to all of the rain we had this summer. We have personally had an abundance of tomatoes, cucumbers, bell peppers, onions, zucchini and so forth. Yep, we are very pleased with how well our garden did this year!
Last weekend I had some guests over for lunch. I decided to use up some of my cucumbers, tomatoes and onions by making up some delicious cucumber tuna salad boats. They are very easy to make and here is how I made them.
2 large cucumbers
dozen large cherry tomatoes
1 small onion
1 stalk celery
1 can Wild Planet Tuna
1/4 cup reduced-fat mayonnaise
1/4 teaspoon salt
1/4 teaspoon ground black pepper
Drain liquid from tuna and place it into a manual food processor. I use the Tupperware Quick Chef. Chop up a little bit of onion and one stalk of celery. Toss them into the food processor. Add in the reduced-fat mayonnaise, salt and ground black pepper.
Cut the cucumbers in half and then hollow them out. Discard seeds but save some of the cucumber pulp and toss it into the food processor. Slice up 6 or more cherry tomatoes into quarters and toss them into the food processor. Place the lid on and process for a few seconds so that everything is mixed together and finely chopped. Cover and place tuna filling into the refrigerator to chill for 2 hours. Wrap cucumbers in plastic wrap and place into the refrigerator until ready to use.
Remove everything from refrigerator and place the cucumber halves onto a plate or serving tray. Use a large spoon to spoon the tuna fish filling into each cucumber boat. Cut cherry tomatoes in half and place them on top. Serve immediately.
