My husband loves anything and everything that is made with cherries. It happens to be one of his favorite fruits and he will snack on fresh cherries every day if I left him. With that said, one of his favorite cherry desserts happens to be my homemade cherry crisp which is really easy to make. We like to make ours in stoneware ramekins for portion control but you can double up the ingredients and make it in a large stoneware or glass baker which is what we do when preparing it for a family get-together. In addition, you can freeze leftovers into plastic freezer containers once cooled. It will keep for up to 2 months in the freezer. Just thaw and reheat in your microwave or oven.
Makes 3 Servings - Ramekins
Homemade Cherry Crisp Recipe
1 can Cherry Pie Filling
1/4 cup Butter (not margarine), softened
1 cup Quick Oats Oatmeal
1/2 cup Light Brown Sugar
Spoon the cherry pie filling into each of the 3 ramekins, filling them 1/3 of the way full. In a medium sized mixing bowl combine together the softened butter, oatmeal and light brown sugar until well combined. Your topping should be crumbly in texture. Divide crumbs into thirds and spoon into each ramekin, topping the pie filling.
Preheat oven to 350 degrees F. Bake for 10 to 12 minutes or until done.
We like to serve ours warm and sometimes serve it with frozen whipped topping or with vanilla bean ice cream. Delicious!

Like your husband I love cherries in any form: fresh, dried or candied. I shall be trying this easy recipe soon and I ma sure it will satisfy my cherry craving! Jo-Ann Brightman
