This is a delicious vintage recipe for an Orange Coffee Cake with Nut Topping that you and your family are going to love! It does take a little time to make but it will be well-worth your efforts! This recipe was given to me years ago by my great aunt so it's at least 40 years old and a family favorite!
Orange Coffee Cake with Nut Topping Recipe
To Make the Cake:
1 large egg
1/2 cup milk
1/2 cup granulated sugar
1/2 tsp. salt
2 tbsp. grated orange peel
2 cups all-purpose flour
1/2 cup melted shortening
1/2 cup orange juice
3 tsp. baking powder
Beat the large egg, add in the milk, sugar, salt and the grated orange rind. Add in 1/2 cup of the flour and the melted shortening. Stir in the orange juice. Sift together the remaining flour and baking powder and then add it into the first mixture. Pour the batter into a well-greased 10" diameter baking dish or cake pan. Prepare the topping below & sprinkle on top. Place the pan into a preheated 350 degree oven and bake for 20-30 minutes or until done.
Nut Topping Recipe
2 tbsp. butter, softened
1/2 cup brown sugar
1/2 cup finely chopped nuts
1 tsp. ground cinnamon
1 tsp. ground nutmeg
Cream the butter until smooth, stir in the brown sugar, cream again with an electric mixer. Stir in the chopped nuts, cinnamon and nutmeg until all ingredients are well combined. Sprinkle the topping on top of the cake before baking. (see above).
