Here in our home we love making a variety of smoothie recipes as they are super healthy for you and can be used as a meal replacement, snack or dessert. With that said, most people make fruit smoothies and not vegetable smoothies which is a shame because the veggie smoothies are really good for you!
Below is my aunt's Green Pepper & Kale Smoothie Recipe and you can adjust the ingredient amounts to suit your own taste buds. You will want to chill the smoothie mixture for 2-4 hours before serving it as it tastes much better well-chilled.
Green Pepper & Kale Smoothie Recipe
2 cups bottled or fresh tomato juice (if using fresh, make sure you remove the seeds).
1/2 cup green pepper, chopped
1 large cucumber, finely chopped (remove the skins and seeds)
1/4 cup fresh kale, chopped
3/4 to 1 cup low-fat yogurt
2 tablespoons fresh lemon juice
1/2 teaspoon salt
2 to 3 teaspoons granulated sugar
Note: If you don't like kale you can add just about any vegetable that you would like. I have made the recipe a few times using broccoli, spinach, carrots or other fresh veggies that I had on hand.
Place all of the above ingredients into a large blending container and process until smooth and creamy. I find that everything blends well together if I finely chop my veggies before blending them. The last ingredient you should add should be the low-fat yogurt. Once done, pour the smoothie mixture into a beverage container and place into the refrigerator for a few hours to chill.
